The classic French toast

Ingredients for 4 persons

For the salad
½ litre of heavy cream
½ litre of milk
2 egg yolks
100 grams of white sugar
5 grams of vanilla extract
4 big slices of brioches or pain de mie or remaining of your old baguettes (bread should be dry to absorb the mixture)
10 grams of butter
20 grams of white sugar for caramelization
*Chef’s tip: Star anise

Method of preparation
In a large container, mix 100 grams of sugar with the egg yolks, pour the cream and milk and add the star anise and the vanilla
Soak the brioche in the cream & milk for at least 1 hour in the fridge (tastiest result if kept overnight)
In a pan, heat the butter and caramelize the sugar (20 grams), on low heat
Fry the brioche bun in the sugar and butter on the both sides, on low heat
Once golden brown, remove from heat
Serve on the spot with fresh fruits, salted caramel sauce or maple syrup
