Homemade mankouche with 3 different toppings by JUSTINE TANACHIAN
INGREDIENTS FOR THE DOUGH
• Warm water
• 1 tsp. Salt
• 1 tsp. Baking soda
• 2 cups Whole wheat flour
• 1.5 cups all-purpose flour
• 3 tbsp. Olive oil
• 2 tbsp. Yogurt
INGREDIENTS FOR THE FILLINGS
1. ZAATAR
• Zaatar mix
• Sumac
• Toasted sesame
• Dried oregano
• Olive oil
2. MUHAMMARA
• 1 Grated tomato
• 1 tsp tomato puree
• Salt and pepper
• Sesame and nigella seeds
• Olive oil
• Chopped walnuts
3. KESHEK
• 1 Grated tomato
• 2 Green onion
• 2 Heaped keshek tbsp.
• Olive oil
METHOD
- In a bowl, start with 1/2 cup of warm water and then add more gradually
- Mix the wet ingredients with the baking soda
- Add the dry ingredients a little at a time
- Knead for 5 minutes at least till you get a very soft dough
- Allow resting
- Meanwhile, you prepare the fillings
- When done with the fillings, set the pan on the stove on low heat and prepare the dough
- Take a small ball of the dough and roll it
- Spread it with your hand and with the rolling pin
- Spread some semolina on the table and roll the dough
- Lay the rolled dough in the hot pan. Bake from one side and then flip over
- Spread the fillings on the dough in the pan evenly
