– Omelet (scrambled eggs with bacon, onion and diced potatoes)
– Cheese omelet (scrambled eggs mix with milk or cream and grated cheese)
– Soufflé (egg yolks, butter, milk and flour)
– Florentine soufflé (basic soufflé stuffed with egg white, parmesan cheese and spinach)

During this class you will learn to cook perfect eggs, a variety of failsafe egg-based dishes, that are economical, simple and healthy.

WHAT YOU WILL LEARN

– Various ways to recognize good eggs from bad eggs
– How to prevent bacteria and the different ways to store eggs
– Main eggs cooking techniques:
Boiling: different cooking temperatures (sunny, medium hard eggs, over-hard eggs)
Frying: sunny side up eggs, over-hard eggs, basted eggs
Poaching
Scrambling eggs: temperature, stirring techniques, cooking timing and ingredients mix choices
Baking: how to prepare the perfect soufflé
