If you are looking to expand your baking repertoire and develop skills in pastry cooking, this class is for YOU!
During this 2-session package, you will learn how to prepare the BEST OF Christmas desserts, following the instructions of our professional TOP CHEF, Chantal.
This class is hands-on AND you get to take all your creations and recipes with you!

We will be partnering with Elle & Vire Professional, pioneer, and award-winning French creamery, to ensure consistent and stable results throughout the apprenticeship.

Day 1: Saturday, December 12th:

On the menu:
– Caramel fudge, apple tart
– Ginger bites with royal icing

Techniques you will learn:
– How to prepare a fool-proof shortcrust pastry dough
– How to make a perfect caramel
– How to naturally caramelize your apples
– How to make homemade gingerbread
– How to make the icing
– Assembling and decorating

Day 2: Saturday, December 19th:

– Buttercream Christmas log
– Christmas baklava, cinnamon, orange blossom

Techniques you will learn:
– How to make the perfect homemade caramel ganache
– How to prepare the spongiest genoise
– How to roll a cake
– How to decorate your log
– How to make baklava
– How to make mhallabiyeh with Christmas-y flavors
– How to assemble the baklava
