Chicken and mango salad

Ingredients for 8 persons
For the salad
2 chicken breasts
2 cups glass noodles
1 cup shredded carrot
1 cup iceberg lettuce, in strips
½ cup mango, cut into pieces.
½ cup green onion, sliced small
½ cup mint, leafs
½ cup coriander, minced
12 leave basil, shredded
¼ cup roasted almonds
For the dressing
½ cup sweet chili
3tbl sesame oil
3 tbl coconut milk powder
3tbl rice vinegar
1tbl ginger
1tbl garlic
Method of preparation
Grill chicken with a little bit of salt, pepper, oil and reserve.
Mix all salad ingredients
Mix all sauce ingredients and hand blend till smooth.
Assemble salad; place vegetables, the cut chicken and arrange on top, then drizzle with sauce and garnish with extra almonds and basil.
